As Cognac goes, L’Organic 07 is a very approachable expression — albeit a curious one, with a nose that offers an oaky core countered by black tea, carrot, toasted spice, and bacon fat elements. The palate surprises with a burst of dried flowers and a gentle, soothing chocolate character, both diverging from the rather savory elements on the nose. Light notes of red fruits, incense, and further floral elements build on the tongue, with the finish eventually giving way to some mild caramel notes. Easygoing but again quite floral on the fade-out, there’s a little bit of everything in the mix to offset some of that aromatic pungency.- Christopher Null
